This place looked really cool from outside the gates, it was closed when I drove past.
Heartland Museum of Military Vehicles in Lexington Nebraska.
Aso if you're a fan the original Cabela's is out there off 80, although I stopped there last year and it was a bit disappointing especially compared to the giant home basspro.

The John Deere museum in Waterloo, IA, the Iowa 80 truck stop, the Strategic Air Command museum in Omaha, and Carhenge in Scottsbluff, NE to name a few. Don’t let the “tHeRe’S nOtHiNg In FlYoVeR cOuNtRy” crowd tell you the great plains isn’t gorgeous countryside.

If you’re a gun nut, there’s a Brownell’s, I think Iowa somewhere next to
the interstate. I keep passing it and thinking I need to preplan the exit so I can stop by one day

Take secondary highways; stay off the Interstate. Stop at convenience stores and buy snacks.

There is the largest truck-stop on I-80 East of Des Moines a bit. If you are near Des Moines around lunch and don’t mind going a bit out of your way, head north on I-35 to Hickory Park in Ames, IA. It’s an inexpensive BBQ joint that serves 6-7/10 food and a shit load of ice cream sundaes.
If you stay on I-80 heading into Omaha on the north side of the interstate, just past the river, you can see not only the largest Diesel Locomotive made but also a Big Boy. https://goo.gl/maps/yEJ5uwim93GvjL4W6

Air Force museum in Omaha? Seems like a perfect halfway point.
Wild card: T ake the southern route and check out the arch in St. Louis. Stop in Russell, KS and take a selfie in front of a Bob Dole sign.

Tasty Tacos in Des Moines is top notch. If you are a chocolate milk enthusiast Anderson Erickson dairy sells some good stuff, also in the Des Moines area.

Ive made that drive 8 times and it sucks, always done it straight through though with minimal gas/pee stops.

-2401 S Chicago St, Joliet, IL. Stop here quick to see a full size Bluesmobile mounted on a pole in the parking lot

Iowa:
-Iowa 80 Trucking Museum, Walcott, IA (museum at the world’s largest truck stop)
-Medical Museum at University of Iowa Hospital, Iowa City, IA (stay less than 30 minutes and it’s free, an hour is less than a dollar)
-Pappajohn Sculpture Park and South Des Moines Sculpture Park, Des Moines, IA
-Pottawattamie Squirrel Cage Jail, Council Bluffs, IA (old prison that used three-story rotating jail cells)
-Union Pacific Railroad Museum, Council Bluffs, IA
Nebraska:
-Freedom Park, Omaha, NE - Submarine, minesweeper, and other craft on land.
-Lauritzen Garden, Omaha, NE - Location of Union Pacific’s Big Boy and other noteworthy trains
